Niels Greefhorst wins ‘Het Glazen Kalf’ at Gastvrij Rotterdam

The prestigious ‘Het Glazen Kalf’ competition was won this year by Niels Greefhorst, chef at the Mosselbank restaurant in Philippine, Zeeland province.


The competition, which is organised each year by the VanDrie Group, was held today, 18 September 2018, for the 20th time, during “Gastvrij Rotterdam”, the trade show for ambitious hospitality professionals, at Ahoy Rotterdam.

Talented young chefs were given the task of preparing a main course for four people in an hour and a half, using the ingredients from a mystery box. The mystery box held rump of veal, calf kidneys with fat and veal sweetbreads. Competitors could also bring along various ingredients as garnishes.

Niels was unanimously declared the winner by the four-person jury. He was presented with ‘Het Glazen Kalf’ trophy and a cheque for veal by chef Huub Oudshoorn. In addition, the magazine Culinaire Saisonnier promised a feature in their trade publication. Niels won the jury over with the right preparation techniques and the desired doneness, with a simple presentation of veal and complementary garnishes. He used all three products from the mystery box. 

Second place was shared by Rick Kleijwegt, chef at SMAAK & MEER in Maassluis, Ian Teeuwen, chef at Château Neercanne in Maastricht, Jeroen van Brecht, chef at the Maassluis Hotel in Maassluis, and Robert van de Kolk, chef at the Diels Restobar in Wageningen. They each received a copy of the book “KALF”. (CALF) 

The jury consisted of Huub Oudshoorn, chef, on behalf of the VanDrie Group, Jeroen van Ooijen, Co-founder of gastronomixs, Henri van der Heijden, owner and chef at the Vista restaurant in Willemstad and Yuri Verbeek, owner of De Kokkerie in Delft. Evert van Dilst, Member of the Board at Euro-Toques, rolled up his sleeves in the kitchen as the kitchen supervisor, and the guest speaker was Edwin Loos from Culinaire Saisonnier.
